VINIFICATION
This wine results from a careful vinification by the classic maceration process, with partial destemming. The resulting must fermented in temperature controlled tanks (26-28ºC) for 12 days. 20% of the blend aged in French oak barrels for 12 months in the mythical Adega Regional de Colares. Blended and bottled in March 2021.
CHARACTERISTICS
An elegant and delicate wine, with notes of cassis, caruma and slight hints of forest, tomato and bay leaf. In the mouth it is dry, lively and spicy. Very herbal and balsamic. Saline, full of complexity and freshness.
