Clay-limestone, better known as “chão rijo”
VARIETIES
Pinot Noir
VINIFICATION
This wine results from a careful vinification by the classic "tanning" process, with partial destemming. The resulting must fermented in stainless steel tanks with temperature control (26-28ºC) for 7 days. 30% of the blend was aged in French oak barrels for 18 months in the mythical Adega Regional de Colares. Blended and bottled in March 2021.
CHARACTERISTICS
An elegant and delicate wine, with classic notes of cherry, sour cherry and cedar. In the mouth it is dry, lively and slightly toasted. Very long and balanced.
