Colares Demarcated Region

In the Sintra municipality there is a small viticultural area that produces a ruby colour wine that with aging acquires an exceptional velvety character and bouquet. It takes several years for the Colares wine to reach maximum quality, although the minimum aging period is 18 months. Due to the long aging period imposed, sales are very limited, making the Colares region a sort of «sanctuary» for connoisseurs of this wine.

The vines of this region have very particular characteristics, due to the proximity of the sea and the strong ocean winds they’re subject to. 

Given its geological nature, Colares can be divided into two sub-areas: “sandy soil (the dune area) and the “ hard soil”(calcareous soil). The Colares wine owes its unique qualities to the grape varieties, the soil and the mild, humid climate during summertime, as well as to the fact that 80% of the vines are placed in “sandy soil”, true to the traditional practice of “unhar” - a process necessary for the ungrafted grapevine cuttings to reach the clay soil underlying the layer of sand.

The geographical area corresponding to the Colares Denomination of Origin is situated in the Sintra Municipality between the Mountains and the Ocean next to the sea, encompassing the parishes of Colares, São Martinho and São João das Lampas.

VINIFICATION

This wine is the result of a careful vinification by the classic process of "bica aberta", with total destemming. The resulting must decanted statically for 18 hours and fermented in stainless steel tanks with temperature control (16-18ºC) for 14 days. 50% of the blend finished fermentation in restored French oak barrels, where it remained for 7 months in contact with the lees. Blended and bottled in June 2021.

CHARACTERISTICS

In the mouth it is dry, fresh and lively, with citrus (grapefruit) notes and slight toast. It finishes with salt and a spicy touch, slightly vegetal, giving it longevity in the mouth.

Hand-picked, these grapes were destemmed and directly pressed in a pneumatic press with cold static decanting, and moving to fermentation in temperature controlled stainless steel tanks. Aged in American oak for 6 months with some soft batonnage with and 22 months in bottle.

CHARACTERISTICS

Lemon yellow color. Discreet aromas of citrus  (lime, grapefruit), pear, sea salt and some toast. In the mouth it offers sensations of freshness  and liveliness  harmonized with an elegant texture and volume that guarantees a great aging potential (minimum: 5 years).

CHARACTERISTICS

Yellow straw. Fresh and with an excellent aromatic complexity,  from notes of citrus, peach, pineapple, seaweed, coconut and some balsamic. In the mouth it has a vibrant acidity, some greasiness and at the end a saline component that gives it a long and persistent finish.

VINIFICATION

Manual harvest for boxes of 18kgs, with the grapes being carefully selected and destemmed in their entirety, then being gently pressed at low temperature. The must is statically clarified at 8º, so that alcoholic fermentation then takes place in French oak barrels at a controlled temperature of 14º, followed by a total aging of 10 months - 6 months with bâtonnage and 4 months on lees. To finish, it ages in the bottle for 2 months.

CHARACTERISTICS

Light notes of peach and plum blossom, with aromas of vanilla and almond liqueur. Mouth with fresh, elegant and enveloping entrance reminiscent of spring water. Complex and mineral with notes of granitic rock, notes of vanilla and green spices such as cardamom. Long, fresh and saline finish.

VINIFICATION

Manual harvest for boxes of 18kgs, with the grapes carefully selected and destemmed in their entirety, followed by a brief skin maceration to extract more primary aromas, then being lightly pressed at low temperature. The must is statically clarified at 8º and fermented in a stainless steel vat at a controlled temperature of 14º. Aged for 6 months with bâtonnage, and then aged on fine lees until the moment of bottling the wine.

CHARACTERISTICS

Citrus aroma with notes of fresh apricot, stone fruit and aromatic herbs such as mint and pennyroyal, followed by a mineral finish. In the mouth it presents itself with some unctuousness and freshness typical of the wines of the Atlantic region. With hints of citrus, it is enveloping and salty with a long finish driven by a vibrant acidity.

VINIFICATION

Manual harvest for boxes of 18kgs, with the grapes carefully selected and gently destemmed in their entirety. Skin maceration in lagar for 48 hours at 10º and alcoholic fermentation at a controlled temperature of 22º for 15 days, followed by post-fermentative maceration for 6 days. After exhaustion and pressing, malolactic fermentation takes place in stainless steel vats, followed by a 12-month ageing in French oak barrels and 6 months in the bottle.

CHARACTERISTICS

Forest aroma, with notes of red fruits such as sour cherry and cherry. It also has an earthy note coming from the granite soil of the terroir. On the palate, with firm and elegant tannins, it presents red fruit, pine and resin, followed by an Atlantic acidity typical of the Colares region and a long and persistent finish

VINIFICATION

Manual harvest, with the grapes being carefully selected and fully destemmed in the winery. Cold pre-fermentative maceration for 3 days. Fermentation in stainless steel vats at a temperature of 25º and with pump-overs every two days. Post-fermentative aging for 1 week, followed by pressing and malolactic fermentation in stainless steel vats. 25% of the wine ages in French oak barrels.

CHARACTERISTICS

Deep ruby colour with aroma of ripe red fruits with hints of smokiness. In the mouth it is soft, with firm and elegant tannins. It also has some Atlantic notes and has a persistent and pleasant finish.
