Colares Demarcated Region

In the Sintra municipality there is a small viticultural area that produces a ruby colour wine that with aging acquires an exceptional velvety character and bouquet. It takes several years for the Colares wine to reach maximum quality, although the minimum aging period is 18 months. Due to the long aging period imposed, sales are very limited, making the Colares region a sort of «sanctuary» for connoisseurs of this wine.

The vines of this region have very particular characteristics, due to the proximity of the sea and the strong ocean winds they’re subject to. 

Given its geological nature, Colares can be divided into two sub-areas: “sandy soil (the dune area) and the “ hard soil”(calcareous soil). The Colares wine owes its unique qualities to the grape varieties, the soil and the mild, humid climate during summertime, as well as to the fact that 80% of the vines are placed in “sandy soil”, true to the traditional practice of “unhar” - a process necessary for the ungrafted grapevine cuttings to reach the clay soil underlying the layer of sand.

The geographical area corresponding to the Colares Denomination of Origin is situated in the Sintra Municipality between the Mountains and the Ocean next to the sea, encompassing the parishes of Colares, São Martinho and São João das Lampas.

VINIFICATION

Grapes resulting from a slow and balanced ripening process. Only the finest bunches were selected. The grape varieties from each parcel were vinified separately, following a careful vinification process using the classic bica aberta method, with total destemming. The resulting must was statically decanted for 24-48 hours and fermented in stainless steel tanks with temperature control (16-18ºC) for 14 days. 5% of the blend aged in French oak barrels for 18 months. Bottled in December 2023.

CHARACTERISTICS

Bright and clear appearance with a medium-intensity citrus color and moderate-persistence tears. The nose is pronounced, revealing tropical fruit notes alongside fresh vegetal nuances. On the palate, it is dry, with balanced acidity, a wellstructured alcohol level, and a round body with elegant, dry tannins. The aromatic profile in the mouth mirrors the nose, offering superior quality. It has good intensity, pleasant balance, and a long, refined finish. This wine has an aging potential of around five years but is ready to be enjoyed now. Highly versatile for food pairings or delightful on its own. Serve at 12ºC.

VINIFICATION

Harvest at the end of September. Grapes immediately destemmed and pressed. Slight skin maceration, inside the press, for 6 hours. The resulting must was cooled (6ºC) and statically decanted overnight. Fermentation in stainless steel, for 16 days, with a temperature of 15-16ºC. It remained in a vat with bâtonnage (12 months). A further 7 months in French oak barrels according to use. Bottled in december 2023.

CHARACTERISTICS

Medium intensity yellow color. Citrus and cooked apple notes. Herbal sensation (anise and honey). Medium body, bittersweet, very fresh and pleasant. As it ages, the wine loses some of its initial fresh style, retaining the elements that make it unique. The aromas become more distinct with the emergence of toasted notes of dried fruits, iodine, wax and hay. More elaborate and spicy fish dishes. Serve with white fish carpaccio with a dash of mustard, cockle rice with coriander, Menier sole, or even pan-seared peas with a touch of mint. Serve at 12ºC.

VINIFICATION

Harvest at the end of September. This wine is the result of careful vinification using the classic “tanning” process, with 50% stemming, fermentation in stainless steel tanks with temperature control (26º-28ºC) and careful pumping over. The aging process took place over 5 years, first passing the wine through large barrels of exotic wood, followed by small oak barrels (more than 4 months of aging in second use French oak barrels), finally, aging in storage and in the bottle. Bottled in May 2023.

CHARACTERISTICS

When young, it has a ruby color and great tannin aggression, characteristics that fade throughout the aging process. Very characteristic nose of the variety, related to sour cherry and light cedar resin. In the mouth it has an Atlantic and balsamic character. Dry and austere texture with a strong mineral acidity. It goes very well with roast meat, game and mushrooms. It benefits from first opening the bottle and/or decanting and should be served at a temperature of 18º-19 ºC.

Grapes resulting from a slow and balanced ripening process. Only the finest bunches were selected. A field blend of Ramisco and Malvasia de Chão de Areia, carefully vinified in traditional lagares with total destemming and temperature control (16-18ºC) for 7 days. The blend aged in French oak barrels for 9 months. Bottled in February 2025.

CHARACTERISTICS

Bright and clear appearance with a vivid orange color of high intensity and moderate-persistence tears. The nose is pronounced, revealing notes of damp earth, resin, and woodland aromas. On the palate, it is notably dry, with vibrant acidity, a wellbalanced alcohol level, and a broad body with silky yet dry tannins. The aromatic profile in the mouth mirrors the nose, offering superior quality. The finish is intense, wellbalanced, and pleasantly long-lasting. This wine has an aging potential of around 15 years but is ready to be enjoyed now. Ideal for pairing with grilled fish dishes, pasta, and even rich, fatty meats. Serve at 12ºC.

Grapes resulting from slow and balanced ripening. Only the finest bunches were selected. A blend of unfermented and fully fermented must, obtained through a careful winemaking process using the traditional bica aberta (open must) method, with full destemming. The resulting must was statically decanted for 24–48 hours and then fermented in stainless steel tanks with temperature control (16–18ºC) for 14 days. 70% of the blend was aged in French oak barrels for 6 months. Bottled in April 2025.

CHARACTERISTICS

Visually, it displays brilliant clarity with a straw-yellow color of high intensity and pronounced legs. The aroma is intense, featuring notes of very ripe white-fleshed fruit, honey, and spices. On the palate, it shows a high level of sweetness, extremely vibrant acidity, low alcohol content, and a broad body with silky, dry tannins. The mouth aroma is of outstanding quality, consistent with the nose. The finish is long, intense, and pleasantly balanced. This is a wine with an aging potential of around 10 years, though it can be enjoyed right away. In terms of food pairings, it goes especially well with cheeses and very sweet desserts. Serve at 12ºC.

Grapes resulting from slow and balanced ripening. Only the finest bunches were selected. A single-varietal Pinot Noir with low-intervention winemaking, crafted through a careful application of the traditional skin-contact method. Fermentation took place in stainless steel tanks with temperature control (26–28ºC) for 7 days, but was racked off the skins on the third day. Bottled in June 2025.

CHARACTERISTICS

Visually, it shows brilliant clarity with a light violet color of high intensity and moderate legs. The aroma is pronounced, featuring notes of red fruit, vegetal nuances, and forest undertones. On the palate, it is very dry, with lively acidity, sufficient alcohol, a broad body, and silky, dry tannins. The mouth aroma is of superior quality, consistent with the nose. The finish is long, intense, and pleasantly balanced. This is a wine meant to be enjoyed young. In terms of food pairings, it goes well with grilled fish dishes, pasta, and even rich, fatty meats. Serve at 12ºC.

Vinified using the classic red winemaking method, with fermentation in stainless steel vats at controlled temperatures (26–28 °C). Approximately 40% of the blend aged for 18 months in French oak barrels, in the historic Adega Regional de Colares. Blended and bottled in December 2023.

CHARACTERISTICS

The wine exhibits a brilliant clarity, with a mediumintensity cherry-red color and moderate tear persistence. The nose is pronounced, featuring notes of cherry, sour cherry (ginja), and cedar. On the palate, it is dry, with a refreshing yet well-balanced acidity. It has a light alcohol content, a delicate body, and elegant, dry tannins. The retronasal perception aligns with the nose, enhanced by a pleasant sensation of freshness. The finish is of good intensity, pleasant, and well-balanced. This wine has an aging potential of approximately 10 years but is ready for immediate consumption. Regarding food pairings, it pairs particularly well with meats and stews featuring earthy and aromatic notes, such as mushrooms. Serve at 16ºC.

The retronasal perception aligns with the nose, enhanced by herbal and balsamic nuances. The finish is of good intensity, pleasant, and well-balanced.

This wine has an aging potential of approximately 10 years but is ready for immediate consumption. Regarding food pairings, it pairs well with spiced roasts (lamb and duck), charcuterie, and aged cheeses. Serve at 16ºC.
