Colares Demarcated Region

In the Sintra municipality there is a small viticultural area that produces a ruby colour wine that with aging acquires an exceptional velvety character and bouquet. It takes several years for the Colares wine to reach maximum quality, although the minimum aging period is 18 months. Due to the long aging period imposed, sales are very limited, making the Colares region a sort of «sanctuary» for connoisseurs of this wine.

The vines of this region have very particular characteristics, due to the proximity of the sea and the strong ocean winds they’re subject to. 

Given its geological nature, Colares can be divided into two sub-areas: “sandy soil (the dune area) and the “ hard soil”(calcareous soil). The Colares wine owes its unique qualities to the grape varieties, the soil and the mild, humid climate during summertime, as well as to the fact that 80% of the vines are placed in “sandy soil”, true to the traditional practice of “unhar” - a process necessary for the ungrafted grapevine cuttings to reach the clay soil underlying the layer of sand.

The geographical area corresponding to the Colares Denomination of Origin is situated in the Sintra Municipality between the Mountains and the Ocean next to the sea, encompassing the parishes of Colares, São Martinho and São João das Lampas.

VINIFICATION

Grapes come from different vineyards on our Estate. They all have been planted in 2006 and have been managed only for the production of rosé for the past 3 years.

The hand-picked grapes went through a tight selection process in the vineyard and winery. After gentle crush to prevent skin maceration, the juice undergoes 48h of static decantation. Fermentation occurs naturally in new and used French oak barrels of 500L and 225L. It rests there for 10 months, with weekly bâtonnage.

CHARACTERISTICS

Pale salmon color. The nose complexity is given by the Atlantic rich flavors, light red fruit, and elegancy of the oak. It has a refined and velvety texture, Ocean flavors and crispy acidity. It finishes long and intense.

VINIFICATION

Grapes picked from the original vineyard planted by Baron Bodo von Bruemmer on the top of Casal Sta Maria.

The hand-picked grapes went through a tight selection process in the vineyard and winery. After gently crushing the grapes the juice stayed a few days in cold maceration in small open vats (lagares). The fermentation took 3 weeks with a daily press of the skins. After the fermentation started, the vats were closed and stayed like this for a couple of weeks. The wine aged for 12 months in used and new French oak barrels of 225L and 500L.

CHARACTERISTICS

Fresh, with notes of roasted red peppers, chocolate and notes of cocoa. Firm tanins, elegant and good acidity typical from the region. Silky in the mouth, deep, with a long after taste with notes of vanilla and spice from the aging in barrels

The grapes go direclty to manual press, 10 hours of gentle pressing, no sulphur additi-on, 12h of settling, 100% barrel fermentation - 100% french used oak. 12 months battonage ageing.

CHARACTERISTICS

Color: Lemon. Nose: look for sea breeze, iodine, “reineta”, apple and minerality. Palate:  Salty, elegant and fresh with hints of iodine in a lingering finish.

VINIFICATION

The grapes are partially destemmed and crushed. Fermentation started naturally with wild yeast and the cap was gently punched down twice a day. After fermentation the cap stayed on wine for 22 days. Pressed in a manual press gently for 8 hours. Ageing: 18 months on 3 french barrels (one new, others 3rd year)

CHARACTERISTICS

Color: Light red. Nose: Look for wilted roses, earth and herbs. Palate: Elegant and austere with mineral and earthy notes. All of the elements are nicely balanced in a persistent lingering finish.
